An easy way to use up over-rip bananas.
Mash the bananas, add lemon juice and sugar in a seperate bowl. In another bowl beat the eggs with a wooden spoon, add pinch of salt and put in about 3 spoons of flour and eggs and mix to a sem-stiff batter. Then add mashed bananas mixture to batter.
Heat a frypan with a little oil and put spoonfuls of banana batter onto frypan and cook on both sides. (Spoonful sizes can be however large or small you desire).
Server with maple syrup and ice-cream or whipped cream, or sugar and lemon juice.
