Homemade custard, bananas, and vanilla wafers combine to make this old-fashioned favorite dessert.
Whisk sugar, cornstarch, and salt in a medium saucepan until blended. Whisk in milk gradually until smooth, then egg yolks. Cook over medium heat, whisking gently until mixture comes to a boil, about 5 minutes. Reduce heat to low and, whisking constantly, simmer 1 minute. Remove from heat, add butter and vanilla, and stir until butter melts.
Layer half the vanilla wafers in a 2-quart bowl. Brush with 1 tablespoon bourbon or orange juice. Top with half the bananas. Pour on half the pudding, spreading evenly. Repeat the last four steps. Cover surface directly with plastic wrap to keep a skin from forming on the pudding. Refrigerate until very cold, at least 4 hours.
