Banana Pudding
In a large bowl, mix boxes of instant pudding, 2 cups heavy cream, and 3 1/2 cups milk for 2 minutes at low speed, then at high speed for 3 additional minutes. Line bottom of a 13x9 serving dish with vanilla wafers. Stand a layer of vanilla wafers along the sides of the dish. Layer banana slices over the gaps of the vanilla wafers. Use 1/3 of the pudding to cover the wafers and bananas. Place another layer of vanilla wafers on top of the pudding, then cover with a heavy layer of bananas, top with more pudding leaving room for whipped topping.
In a medium mixing bowl, make the whipped cream by adding 2 cups heavy cream , 2 tbsp sugar, and 2 tsp vanilla, using a mixer beat until cream thickens and pulls away from the sides of the bowl. Spread in thin layer over the pudding . Crush 3-4 vanilla wafers and sprinkle over the top as a garnish.
Cover and chill overnight.
