From the Nilla Wafer box!
Source: Nilla Wafers
Reserve 10 wafers for garnish.
You will need a 1 1/2 quart casserole dish.
Mix 1/2 cup sugar, flour and salt in the top of a double boiler. Blend in 3 egg YOLKS and the milk. Cook uncovered, over boiling water, stirring constantly for 10-12 minutes, or until thickened. Remove from heat and stir in the vanilla.
Spread a small amount of custard onto the bottom of the casserole dish. Cover with a layer of Nilla Wafers and a layer of sliced bananas. Pour about 1/3 of the remaining custard over the bananas. Continue to layer wafers, bananas and custard to make 3 layers of each, ending with custard.
In a medium sized glass bowl, beat the set-aside egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar and beat until still but not dry. Spoon on top of the custard, spreading to cover the entire surface and sealing well to the edges.
Bake at 350 degrees for 15-20 minutes or until slightly browned. Cool slightly and refrigerate. Garnish with the reserved wafers.
