1. Preheat oven to 350 F . Prepare a 9"x5" loaf pan with nonstick cooking spray .
2. Blend dry ingredients in a large mixing bowl . In a separate bowl , combine oil , buttermilk , vanilla & bananas . Mix well . Pour banana mixture into dry ingredients and stir until blended . Add walnuts and stir until blended . Pour batter into baking pan .
3. Bake for 45 to 55 minutes or until golden brown and a toothpick inserted into center comes out clean .
