Jeff's recipe
Preheat oven to 350 degrees.
Place potatoes in pot with enough water to cover. Bring to a boil and cook until tender. Drain and mash with 1 teaspoon butter and enough milk to reach desired creaminess. Season with salt & pepper.
In a large skillet over medium heat, cook sausage until heated through. Remove from pan & set aside. Add remaining butter to pan and cook onions until tender. Mix gravy as directed on packet and add to onions. Simmer, stirring constantly to form a thick gravy.
Pour half the gravy into a square casserole dish to coat the bottom. Place sausages in a layer over gravy (butterfly sausages if desired). Pour remaining gravy over sausages and top with mashed potatoes.
Bake, uncovered, for 20 minutes until potatoes are evenly brown.
