This recipe was modified from "Honey Barbecue Sauced Chicken" from "365 Ways To Wok"
I finely chopped the vegetables in a Ninja food processor to hide them from a finicky little six year old girl.
1. Cut the chicken into pieces and rinse them and pat dry. In a medium bowl, combine barbecue sauce, chicken broth, orange juice, soy sauce, honey and orange zest. Whisk until the sauce is well blended.
2. In a wok, heat the oil over medium-high heat until hot. Add bell pepper, leeks and mushrooms and stir-fry until softened, 3 to 5 minutes. Arrange chicken pieces on top of the vegetables in the wok.
3. Pour sauce over chicken and vegetables. Raise heat to high and bring to a boil. Reduce heat to medium, cover, and cook 20 minutes. Turn chicken over. Cook, covered, until chicken is tender, 20 to 25 minutes longer. Remove chicken to a serving bowl and cover to keep warm.
4. Raise heat to high and boil until sauce thickens, 4 to 5 minutes. Pour sauce over chicken and serve.
