In medium-sized bowl, combine barley flour, sugar, baking powder, and salt. In a 2-cup liquid measuring cup, whisk egg and add milk to make 2 cups. Pour into flour mixture and whisk to combine. Ladle onto a hot (350F) greased griddle. When bubbles pop and edges appear dry turn to brown other side.
For Blueberry Pancakes add 1 cup of fresh or frozen blueberries to the batter.
Makes 12(3-inch) pancakes.
