This is a simple and quick gluten free alternative to a traditional Egg Cassrole. This is always a hit with our Church group coffee hour and we are always asked for our "secret". Here it is!
Brown the bacon strips until crisp. Remove and drain. Crumble the sausage
in fine pieces into a skillet and brown. Remove and drain.
Grease a 13 X 9 X 2 baking dish. Line the bottom of the dish with the hash
brown potato patties.
In a large bowl, beat the eggs. Add bacon, sausage, onions, peppers,
salt, pepper and half the cheese. Pour into the baking dish covering the
hashbrown potatos. Bake, uncovered, at 325 degreess for 30-35 minutes.
Sprinkle the remaining cheese over the top and heat until melted.
Check for doneness with a toothpick inserted in the center of the
dish. It will come out clean when dish is done. This is a perfect casserole
to be made ahead of time.
This dish can be converted to vegetarian by removing the meat and adding a variety of vegetables to suit.
This is a recipe that can be modified in any way you desire. I have made vegetarian versions using a varity of vegetables. I have also made a mexican style of cassrole using peppers and chorizo sausage. Have fun!
