Preheat oven to 375.
Whisk granulated sugar, baking powder, soda, salt, half of zest (if using) and flour into bowl to combine.
Add butter pieces and use fingers to work into flour until only pea-sized pieces remain.
Create a well in the center. Add cream and beaten egg. Mix with a fork, slowly incorporating the dry ingredients until shaggy dough forms. Ok to look dry. Do not overwork.
Lightly knead dough in bowl until it comes together.
Turn out onto lightly floured surface and pat into a 1" thick round.
Cut into 8 wedges like a pizza and transfer onto a parchment lined baking sheet.
Brush scones with cream and sprinkle with sugar (very little to none if adding glaze).
Bake until golden brown, 25-30 minutes
Let cool for at least 15 minutes before glazing.
Combine confectioners sugar, other half of zest (if using), and juice/water to form glaze.
Drizzle onto scones using spoon or plastic bag. Let dry.
Store lightly covered at room temp.
Cranberry-Orange: 1 cup cranberries + 1+ tbls orange zest in scones, 4 tbls OJ and 1 tbls orange zest in glaze
Lemon-Blueberry: 1 cup frozen blueberries + 1+ tbls lemon zest in scones. 4 tbls lemon juice and 1 tbls lemon zest in glaze
Lemon-Rosemary: 2 tsp lemon zest + 2 tsp fresh rosemary in scones
Cinnamon-Chocolate: 1 cup chopped bittersweet chocolate and 1 tsp. cinnamon added with butter
Pecan-Oat: 3/4 cup old fashioned oats and 3/4 cup chopped/toasted pecans added with butter. Top with 1/4 oats and sugar before baking
