1.Preheat oven to gas mark 4 or 180 degrees celsius.
2.Mix 250g softened butter and 140g caster sugar in a large bowl.
2.Then add 1 egg yolk and 2 tsp vanilla extract and briefly beat to combine.
3. Sift over 300g plain flour and stir until the mixture is well combined and a dough like mixture.
4. Place the mixture on to a floured tray and cut out your biscutes.
5. Place in oven for 10-12 minutes and leave to cool for 5-10minutes.
