Light pancakes that are easy to freeze
- combine eggs and salt
- Gradually add the flour and milk until smooth
- Refrigerate for at least an hour or overnight
- Cook for 45 secs until light brown, flip and cook for a further 15 secs
Notes: for a sweet filling you could add lemon juice and sugar, Nutella, peanut butter and jam, etc.
For a savoury filling you could add chopped ham and cheese ( heat in the microwave for 15 secs ) ,peppers, onions, bacon, etc.
To freeze: separate each crepe between sheets of baking parchment, cling film etc and seal in an airtight container for up to 4 months. To avoid tearing, allow them to thaw thoroughly before separating.
If the batter is a bit thick after refrigeration, add a little milk, it should be the consistency of thick cream.
