I love cooking fish this way because it's quick and very tasty. I use either Plaice or Lemon Sole.
Simply take your fish and fillet it.
Mix the flour on a plate with some salt and pepper.
Heat the butter in a frying pan and then, one fillet at a time, coat with water and then place the fillet in the flour mixture coating both sides of the fish. Put it straight into the frying pan, and cook each side for no more than three minutes.
