Please bones in large stock pot and cover with cold tapwater (around 10 cms).
Boil then reduce heat to low, do not cover.
Simmer chicken three hours, roasted chicken two hours, beef eight hours. Top pot off with boiling water as needed.
Strain Stock through colander. Strain again through fine sieve, back into washed pot.
To concentrate; simmer and reduce on low to 1/3 initial volume.
To use cubes in recipes had 2/3 their volume in water.
Pressure cooker: chicken 30 minutes, beef one hour.
