Dissolve yeast in warm water to which 1 teaspoon of sugar has been added. Set aside. In large bowl, mix the milk, shortening, salt, egg and 2 cups of flour. Stir well, then add rest of flour until it pulls away from sides of bowl. NOW turn off oven so that it is only warm.
Turn out dough onto floured surface. Knead until smooth and elastic. Place in greased bowl then flip so greased side is up. Cover with plastic wrap, then a wet clean tea towel. Let rise in oven or other warm place until doubled (about 1 hour). Punch down dough. Shape. Rise again.
