Heat the oil and fry the onions on a low heat in a covered saucepan until softened. Add the garlic, stir for a minute, and add the rest of the ingredients. Add a pint of water and bring to the boil. Cook on a high heat, stirring often, turning down the heat as the sauce reduces.
• Add capers and finely chopped anchovies for Pasta Puttanesca.
• Add mushrooms, peppers or courgettes for a chunky sauce.
• Add a tin of tuna, ½ tsp cayenne pepper and swap basil for oregano for tuna pasta sauce.
