Preheat oven to 400 degrees.
In a small bowl, stir together olive oil, coriander seeds, ground peppercorns, garlic, turmeric, mustard, basil, and amino acids (or tamari). On a large baking sheet, spread the cauliflower and shallot rings in an even layer and drizzle with the olive oil mixture and toss to coat, seasoning with a few generous pinches of sea salt and roast for 25-35 minutes, until tender. Place in a large bowl and serve warm.
