Mash for 75 minutes at a ratio of 1.5qrts water per pound of grain.
Boil for one hour,
Add mt hood hops at start of boil
Add honey with 20mins left
Add ahtanum hops and basil with 10mins left
Chill to 72deg with chiller, then place in fridge to get to 50deg.
Pitch yeast at 50deg
Let rise naturally to 65deg, then hold at 65 for 2 weeks
Crash in fridge for 3 days
Transfer to keg. Keep at 45deg, 12-14 psi
