Heat vegetable oil in 4 Qt saucepan on medium-high. Add 1 teaspoon ground coriander and cook 30 seconds. Add 1 cup of basmati rice and cook 2 minutes, stirring.
Add 1 1/2 cup water, heat to boiling. Cover and simmer on low 20 minutes. Let stand 5 minutes
Stir in 1 cup frozen peas - thawed. Top with 1/4 cup roasted, salted almonds, chopped.
