Sift together flour, baking soda, and salt; set aside. Beat butter with both sugars. Add eggs, beating well. Add mint extract and coffee. Add dry ingredients and mix well. Stir in chocolate chips and nuts. Drop by teaspoonfuls onto cookie sheets, about 2" apart. Bake for 8-10 min.
