My own creation...not fancy.
1. Preheat oven to 450 degrees.
2. Spray a deep baking dish with olive oil or non-stick spray.
3. Chop potatoes, carrots, green pepper, and onion and put them in the backing dish.
4. Sprinkle with Mrs. Dash and stir to combine.
5. Put vegetables in the oven and set timer for about 30 minutes.
6. While the vegetables are cooking, place chicken breasts in another baking dish and cover with BBQ sauce.
7. After about 15-20 minutes, turn the oven down to 375. Leave the vegetables in the oven. Add the chicken breasts to the oven and cook for 15 minutes.
8. After about 15 minutes, flip the chicken breasts over and cover with more BBQ sauce. Then cook for another 15 - 20 minutes.
9. Check the temperature to make sure the chicken breasts are fully cooked. Serve with vegetables.
