An easy bbq chicken mac 'n' cheese
boil chicken breasts in water, sprinkle with 1 tsp salt 10-12 minutes
move chicken to bowl and shred
add 1 cup bbq sauce and mix, set aside
pour out water from pan
heat 3 tbsp unsalted butter, let melt
add 3 tbsp all purpose flour
stir
add salt, garlic powder, onion powder, milk
stir
turn off heat
addd 2 cups yellow cheese
add 1/4 cup parmesan
add 1/4 cup heavy cream
stir
in another bowl, add 12 oz cooked rigatoni
pour cheesy mix over rigatoni, mix
put cheesy rigatoni in cast iron skillet
sprinkle 1/4 cup yellow cheese
cover with bbq chicken
bake 25 min at 350
sprinkle with sliced scallions and cilantro
serve
