Chicken with Mango Sauce
Combine 425gm drained can mangoes in food processor with 1/3 cup chicken stock, 1/3 cup sour cream and 1 teaspoon curry powder. Blend 30 seconds or until smooth. Transfer to medium pan, add 1/3 cup chives, stir over heat 2 minutes. Cut a small hot BBQ chook into serving size pieces. Serve with mango sauce. If desired serve with pasta. Serves 4
