Everyone has their favorite potato salad, mustard or country style potato salad but everyone that has had mine has loved it. I've been requested to make this for multiple events time and time again.

Get out and line up all ingredients. Skin and remove potato eyes and any dents leaving some skin. Wash and dry them, cube them up. Smaller potatoes cube a little smaller in size. Boil them in water (I salt the water, 1 teaspoon per gallon). When the largest cube is fork tender then drain them. Boil the eggs, 12-15 mins (remove shells), I finely chop them. In a large mixing bowl add hot potatoes, eggs and cheese to melt the cheddar and lightly mix, then add everything else besides the garish items such as green onion and perfect pinch. Mix well, add the garish ingredients to the top. Place in the fridge, serve when cooled (at least one hour) or over night. *When the smaller potatoes are cubed smaller, when everything is mixed together the smaller cubes will mash to give every bite a potato taste.
