Total cooking time about 2 -2.5 hours for 15 lb turkey. Add smoking chips over coals in beginning. Probably complete without but maybe refil coals at about 1 hour mark (which should be enough for complete cooking). Appx 10 min per pound.
Put turkey on rack with medium size aluminum pan in bottom for inverted cooking. Add a little water to pan so that drippings do not burn and can be used for gravy. Turkey is suggested to be fully cooked when a meat thermometer registers 170 degree in thigh and / or 160 degree in breast. Let stand for 15-30 min. While waiting prepare gravy
Gravy - Take dripping from pan add flour (1/2 cup) gradually with 4 cups liquid (broth from gibletes, chicken broth etc.).
