Place onion, green pepper, and roast in crockpot. Pour half the bottle of BBQ sauce over roast and add 1/4 C. water or broth. Cook on low overnight (about 8-10 hours). Remove vegetables (if desired) and shred meat with forks. Add remaining BBQ sauce and mix well. Freeze. To serve, thaw and warm through. Serve on buns or baked potatoes.
