This is a great leftover pantry meal I found on Zaar.
1. Saute the onion, garlic and chilles in 2 to 3 tablespoons of canola oil.
2. Add the rice, beans, salsa and seasoning.
3. Bring to a boil and simmer uncovered for 20 minutes until thickened.
4. Meanwhile lightly fry the tortillas.
5. Fill the tortillas with about 1/4 cup of bean mixture and top with lettace, cheese, avocado, cilantro, etc.
