Soak beans in a pot for 24 hours. To beans and water, add onion, green pepper, carrots, celery, and pork hock. Heat to boil. Skim, reduce heat to simmer and add chicken stock, salt, thyme, mustard, garlic, and pepper. Cover and cook until beans are tender, about 4 hours.
