Cover head w/foil, in low sided pan or on baking sheet and bake until soft, about 30 min @ 350?.
Pick through beans and rinse.
Melt drippings in Dutch oven over med low heat. Stir in onion, cover and sweat several min, until onion softens and becomes translucent but has not begun to brown. Stir in garlic and cook 1 more minute. Add beans and chicos, cover w/water, and add spices.
Bring beans just to boil over high heat, then reduce to low and simmer covered for about 6 hours. After 1 hour, circulate beans up from bottom ad check water level. If there is not at least an inch more water than beans, add enough hot water to bring it up to that level. Check beans every 30 min, repeating process. There should be extra liquid at the completion of cooking time, but mixture should not be watery.
