If no ham hock, sub 4 oz of salt pork and omit salt in step 2. Monitor water level- do not let fall below level of the beans- add if nec. Good garnishes include finely chopped onion, jalapeno, dill pickle, or tomato.

1. Dissolve 1 1/2 tsp salt in 2 quarts cold water in lg container. Add beans and soak for at least 8 hours or up to 24. Drain and rinse well.
2. Combine 12 cups water, ham hock, beans, and 1 tsp salt in Dutch Oven. Bring to boil. Reduce heat to med-low and simmer, uncovered, stirring occasionally, till beans are tender, about 1 1/2 hours, skimming any foam from surface with a spoon.
Remove from heat and let stand 15 min.
