Heat the milk with 1 bay leaf and 6 peppercorns for 4 minutes / 90?C / Speed spoon. Cool for 30 minutes or ice bath if you're in a hurry. Sttarin this favoured milk through a sieve.
Put milk mixture, plus butter and flour ingredients in the machine and cook 6 minutes / 90?C / Speed 4.
Add nutmeg and cayenne pepper to taste.
This makes a sauce of pouring consistency. Make it thinker with 50g flour.
The plain flour can be substituted for rice flour, or 30g corn flour.
Great sauce, as it says on the tin.
