Lasagne sauce
Heat milk to scalding point and set aside.
Melt butter in another saucepan and stir in flour. Cook, stirring, until a smooth golden paste (roux).
gradually work in hot milk and stir until sauce thickens and is very smooth. Continue stirring until sauce boils. Cook a further 10 minutes with pan on a simmer mat over a gentle heat. Season to taste.
