-Put milk on stove to warm up a little (low heat)
-Put 2T butter in pot
-Sweat Onions till translucent
-Put in 7oz butter and melt
-add flour and make white roux
-use whisk and ladle milk into roux while whisking (so avoid lumps) and slowly add all the milk.
-Simmer (do not scorch) for about ten minutes until desired consistency
-season to taste
