Combine the first 7 ingredients into a large saucepan (see NOTE below).
Bring to a boil, then simmer for 5 minutes, stiirring constantly until sugar is no longer grainy.
Once it has simmered for 5 minutes, stir in the vanilla and maple extracts.
Let cool and pour into appropriate container.
NOTE: Watch for overboil. When the baking soda hits heat, it will froth up and expand, so make sure there's room in the pan for the expansion, otherwise there will be a sugar and butter volcano to deal with.
