Easy Parmesan Flounder Florentine
Sauce
1/2 C Ken''s Creamy Parmesan Dressing
1/4 C of Parmesan grated cheese
Preheat oven to 425 degrees.
Spray an 11x17 baking dish with non-stick cooking spray. Rinse, dry and coarsely chop bagged spinach. Put in baking dish. Drizzle olive oil over spinach. Sprinkle spinach with basil, onions and feta cheese. Place fish fillets on top of spinach mixture. Lightly sprinkle fillets with lemon juice, then basil and rosemary. In a small bowl, mix Parmesan cheese and salad dressing. Spoon sauce on fillets. Bake for 15-20 minutes or until fish flakes apart with a fork. Serve fish and spinach together.
Serves 4
I served this with sun-dried tomato basil rice by Near East. (They're organic and much of their products are made with wheat flour or brown rice. Delicious sides that really enhance any meal. Worth finding in your grocery store.)
Variations:
* Instead of Parmesan dressing, substitute mayonnaise or Ranch dressing in the sauce
* Instead of Flounder, substitute Orange Roughy or Tilapia
* Add your favorites to the spinach: sliced mushrooms, halved cherry tomatoes, olives, cream of mushroom soup, etc.
* Serve with a side of fettuccine or angel hair pasta, or sour cream mashed potatoes
