Mix wet ingredients thoroughly with a spatula. Sift flour and mix dry ingredients.
Slowly fold in dry ingredients with the wet ingredients to avoid clumping.
Mix for about a minute, then add a desired amount of chocolate or peanut butter chips to the mixture. Mix just until chips are distributed evenly. Refrigerate for 15 min.
Remove from fridge and knead to a thickness of 1/4 of an inch, then cut with 3 inch wide circular cookie cutters.
Place in freezer for 10 minutes ( or refrigerate for 30 minutes).
Remove from freezer and bake at 350 degrees Celsius for 10-12 min or until brown.
Remove from oven and let cool on a cooling rack until cool to the touch.
Assemble cookie sandwiches by scooping ice cream and topping with another cookie.
Roll assembled cookies in the chopped peanuts.
