For Meat Sauce: Chop onion finely and saute in oil in heavy based pan. Add meat and brown then add tomatoes, tomato paste, garlic, mushrooms, herbs, spinach and grated vegetables. Bring to boil, reduce heat and simmer uncovered until sauce starts to thicken. This sauce should be fairly liquid as the lasagne layers will absorb moisture during baking.
For the Bechamel Sauce (Cheese Sauce): Melt butter in saucepan, add flour and nutmeg, blend until smooth. Stir over heat 1 minute. Gradually add milk and stir until sauce boils and thickens. Reduce heat and cook 1 minute. Remove from heat and stir in grated cheeses until they melt.
Baking: Preheat oven. Oil a large flat casserole and cover the base with a layer of cheese sauce, then a layer of prepared meat sauce. Arrange a layer of instant Lasagne sheets (straight from the pack) over a fairly liquid sauce and cover with a layer of cheese sauce. Repeat layers until all instant Lasagne sheets are used. Cover the top layer of lasagne with a thick layer of cheese sauce and top with grated cheese. Bake uncovered in a moderate oven (180 C or 350 F) until golden brown - approximately 30 minutes gas, 40 minutes electric.
Veggies can be omitted or substituted for others - chopped brocolli, bok choy, all zucchini instead of the variety, more mushrooms (the more the better!), etc
Cheese Sauce is creamier if you use lasagne sheets with the rippled edge
Freezes well - cut into portions first
