Goulash soup is hearty enough to be eaten as a main course. This soup warms your body and your soul on wintry day. I cook a light version of this soup without bacon, potatoes and beef stock.
In a soup pan, warm olive oil over medium heat, sauté onion and garlic, 5 minutes. Add beef cubes, cook 10-15 minutes, without stirring, until liquid evaporates. Mix in tomatoes, crushed tomatoes, 1 cup vegetable stock, salt, peppers, bay leaf, and coriander. Bring soup to a boil; reduce heat to medium-low, cover and simmer, 25 minutes. Add bell pepper and 1-1/2 cups of vegetable stock. Continue cooking 20 to 25 minutes, or until beef is tender. Serve with chopped parsley.
