This stuffing can be used to stuff any pasta. It can even be put on pizza dough to make a gourmet pizza.
Prep:
Place spinach in colander, under cool running water, to thaw; break into smaller pieces as possible
Preheat oven to 425 degrees
Cut salami into bite size pieces
Chop pimientos
Cook Manicoti pasta for 4 minutes
1. Brown beef and sausage together till all pink is gone. Drain fat. Salt and pepper to taste.
2. Drain spinach by pressing it with a paper towel firmly against the colander.
3. stir in pimentos, salami, spinach, and bruschetta into meat, cook 1-2 minutes. Transfer to a medium bowl and set aside to cool.
4. Stir in eggs and 1/2 cup of cheese
5. Stuff pasta with meat mixture, place in a baking dish.
6. Pour Prego on top of rolls. Sprinkle with remaining cheese.
7. Bake in oven on 450 degrees for 20-25 minutes.
Make sure your meat mixture is cooled before adding the eggs. If you do not, the eggs will start to cook.
