Beef casserole with cauliflower , zucchini and mushrooms.
Using a skillet on med high heat, brown ground beef with onions and garlic, then drain and set aside.
Boil chopped cauliflower in large pot under tender. Drain water and add the ground beef mixture.
In skillet, saute zucchini, mushrooms, and tomato in olive oil until tender, but not mushy. Add to beef cauliflower mixture. Add cream of mushroom and fold into mixture. Transfer mixture to casserole dish. Sprinkle cheese on top and bake at 350 for 30 minutes.
