1. Brown beef, onion, & bell (green) pepper in skillet 2. Drain Off excess fat. 3. Heat enchilada sauce in pan (do not boil) 4. Fry tortilla in oil (about 10 seconds per side) 5. Coat tortilla with warmed sauce (both sides) 6. Stuff each tortilla with 2 part Cheddar (Marble) cheese to 1 part Pepper Jack cheese then add 2 to 3 spoonfuls of beef mixture. 7. Roll tortilla and place in baking dish. 8. Cover tortillas with remaining sauce then sprinkle remaining cheese over top. 9. Bake for about 20-25 minutes at 350-400.
Note: to increase spicyness , either add more pepper jack cheese or add diced pepper to ground beef.
