Beef and mushrooms
Trim all mushrooms. Heat 100ml vegetable oil in a very hot fry pan and sauté mushrooms separately in small batches. Remove to a draining tray. Quickly sauté shallots and chopped garlic. Add this, along with spring onion, to mushrooms, Season to taste and set aside. Bring stock to the boil. In a non-stick fry pan, sweat the finely chopped garlic, salad onion and ginger in sesame oil. Add wine, mix, and then add to simmering stock. Add rice flour and whisk in butter. Season to taste. Add 20 ml vegetable oil to a preheated heavy-based fry pan and sear fillets on both sides. Remove from heat and rest in a warm place. Reheat mushrooms. Place each fillet on a warmed plate, scatter a few black beans around fillet and spoon mushroom sauce over the top and around the fillet.
