Beef Jerky
Recipe is for 5 lbs.
Easiest to find sliced round steak or any lean meat pre-sliced 1/4" thick.
Buy it when marked down and freeze until you have 5 lbs.
Remove any fat and slice in 1" strips.
Pour marinade over the strips and freeze overnight or as long as you like.
Thaw in frig for 1-2 days.
Lay strips on grill allowing lots of air circulation, but not to fall through.
Easiest to use an electric smoker (Home Depot, red color about $80) as it holds 170 degrees nicely.
Add moist hickory chips once or twice.
Oven will do if it can be set that low and you put plenty of foil below for the mess. Keep temp under 180.
Takes 3-4 hours, but check at 2 1/2 hours.
OK to be not quite dried out as freezing again will dry further.
Must be kept frozen as no preservatives.
