Steak smothered in creamy mushroom sauce with onions and spinach. The sauce has a small amount of red bell pepper to give it added dimension.
Served with hot mashed potatoes as a side.
1. Heat 1 tablespoon of oil in a 12 inch skillet over medium high heat. Add beef and cook until well browned on both sides. Remove the beef from the skillet. Pour off any fat.
2. Heat the remaining oil in the skillet. Add the onion and pepper and cook for at least one minute. Stirring occassionally. Add the garlic and cook until the vegtables are tender-crisp. Stirring often.
3.Stir in the soup, water, vinegar and rosemary in the skillet and heat to boil. Return the beef to the skillet. Reduce the heat to medium. Stir in spinach. Cover and cook for at least 2 minutes- not too long. Serve the beef and vetable mixture with potates.
Substitute fiet minogn for sirlon for more tenderness. Cook meat once it is out room temp. You can season to taste. I season both sides with a pinch of salt and pepper and add pinch of garlic powder and steak seasoning to on side of meat.
You may want to give the meat a little time to reheat before adding spinach in step 3
