Line shallow roasting pan with foil. Place roast on foil and pour 1 cup of water and mushrooms over roast. sprinkle with soup mix. Seal roast in foil tightly. Bake at 350 deg F for 2 1/2 to 3 hours or until meat reaches the desired doneness. 145 deg med rare, 160 deg med and 170 deg well.
Remove roast to a serving platter and keep warm. Pour drippings and mushrooms into a saucepan. Combines cornstarch and remaining water until smooth; gradually stir into drippings. Bring to a boil; cook and serve for 2 minutes or until thickened. Serve with sliced beef.
