General instructions:
1. Heat large skillet over-medium high heat.
2. Add 1 lb lean ground beef, along with any seasonings.
3. Break up beef with wooden spoon, browning until cooked through and any liquid has cooked away, about 10 minutes.
4. Stir in veggies and cook until tender and heated through
IRISH
Seasonings: 1 cup chopped onion, 1/2 cup lager or pilsner beer (after browning meat and onion)
Veggies: 2 cups green cabbage, thinly sliced
To serve: Spoon over 4 baked potatoes and top with 1/4 cup grated Irish cheddar
CAJUN
Seasonings: 1 1/2 teaspoon salt-free Cajun/Creole seasoning
Veggies: 1 cup chopped onion, 1 cup thinly sliced celery, 1 thinly sliced red bell pepper, 1 1/2 teaspoon salt-free Cajun/Creole Seasoning
To Serve: Toss with 4 cups cooked brown rice, 1 (15oz) can rinsed and drained kidney beans, and 1 teaspoon salt-free Cajun/Creole seasoning.
ASIAN
Seasoning: 2 Tablespoons soy ginger sauce, 2 tablespoons water
Veggies: 1 cup pineapple chunks, 1 chopped red bell pepper, 6 thinly sliced green onions
To Serve: Toss with 2 cups prepared and drained rice vermicelli noodles and serve in lettuce cups
TEX-MEX
Seasoning: 1 tablespoon chili powder
Veggies: 1 (15oz) can diced tomatoes, 1 (15oz) can rinsed and drained black beans
To Serve: Ladle over squares of cornbread, top with diced avocado, and serve with lime wedges
ITALIAN
Seasoning: 1 tablespoon Italian seasoning, 8 thinly sliced oil-packed sundried tomatoes
Veggies: 1 (15oz) can diced tomatoes, 1 bunch thinly sliced lacinato kale (stems removed), and 2 teaspoons chopped garlic
To Serve: Spoon over or toss with 3/4 lb pasta, cooked and drained
