This hearty country-style soup is called mole de olla, after the earthenware pot or olla, in which it is simmered.
Brown Meat in oil in a pot. Drain fat. Add broth, salt, pepper. Bring to a boil then reduce heat and simmer on low for 45 min.
Cut dried peppers open, discard stems & seeds then place the peppers in a small bowl & cover w/boiling water, Let stand for 30 min. to soften then drain well and coarsely chop peppers.
Combine chopped peppers tomatoes, onion, garlic, & cumin. Cover and blend in food processor. Then stir into the beef mixture.
Add Potatoes & corn. Bring to boiling then reduce heat. Simmer covered for 20 min. Stir in zucchini. Then simmer 10-15 min.
