This is a great meal for the crockpot. Just set it up in the morning, especially on Sunday, and it is ready by dinner time.
Cut the stew beef chunks into small pieces (1/2-3/4") and brown in a small amount of oil. Place in crockpot. Sprinkle with beef stew mix. Place cut-up vegetables on top of beef; pour tomatoes over this mixture. Let mixture cook on high for about 4-5 hours or until carrots are well done. Pre-cooked leftover vegetables could be added about a half-hour before the end of the cooking time; they just need to get warm.
If desired, cook noodles during the last half-hour of crockpot cooking time. Serve the stew over the noodles.
