Roughly chop the parsley leaves, finely chop the stalks
Place the frying pan on a medium heat, add a splash of olive oil. gently fry the onion and garlic.
Cut the beef into finger sized strips and put in a bowl with the paprika and a good pinch of salt and pepper.
Once the onion mix is soft tip it into a bowl and set aside.
Fry the beef strips in a little olive oil over a high heat.
Add the mushrooms and chopped parsley stalks and stir fry for a couple of minutes. Tips the onions back in and heat through.
Carefully add brandy (it should ignite or set fire to it as approp to your heat source), allow the flames to burn out.
Add half the creme fraiche and the gherkins, simmer for 1 min.
Take of the heat and add the rest of the creme fraiche, lemon juice and 1/2 chopped parsley leaves. Stir thoroughly
Serve with rice and rest of parsley sprinkled over.
