Suggest a better description1. For the marinade/dressing, combine in a bowl lime rind, lime juice, parsley, chili powder. & garlic. Set aside 45ml in a large bowl for dressing. Rub the remaining mixture over both sides of steak. Cover & refrigerate for at lest 30 mins.
2. Toast tortillas in the oven. Spray both sides or tortilla with cooking spray. Place in single layer on a baking sheet. Bake at 360F for 10 mins.
3. Pat steak dry; season with salt & pepper. Grill over medium high, about 5 mins pet side. Let rest before slicing.
4. Heat 15ml of the oil in a large skillet over medium heat. Add onion and garlic; cook until onion is softened, about 4 mins. Add mushrooms; cook until all liquid is released, about 5 mins. Reduce heat to medium; add tomatoes & corn. Cook, stirring, just until softened, about 5 mins.
5. Whisk remaining oil into reserved marinade to complete dressing. Add steak, mushroom mixture, lettuce & parsley, tossing gently to coat.
6. Build the tostada.
